Summer Turkey Recipes

 

Two great recipes from Manitoba Turkey Producers

Feta Stuffed Greek Burgers

 

Ingredients

1.25 lb ground turkey 565 g
¼ cup bread crumbs 60 mL
1 tsp dried oregano 5 mL
½ cup kalamata olives,
pitted and chopped 125 mL
1 tsp lemon zest 5 mL
1 tbsp lemon juice 15 mL
1 egg 1
8 oz feta cheese 230 g
  salt and pepper, to taste


Directions
In a large bow, combine turkey, bread crumbs, olives, lemon zest, lemon juice, egg, salt and pepper. Mix well. Shape the turkey mixture into four equal sized balls. Insert thumb into centre of each meatball to create a pocket. Put two ounces of feta in the center of each meatball and close meat around cheese. Shape into four burgers. Grill burgers 5–7 minutes each side, over medium heat, or until the internal temperature reaches 175°F (80°C). Serve with Greek pita, tzatziki sauce, tomatoes and cucumbers.

Turkey and Black Bean Salad

 

Ingredients

½ cup olive oil 125 mL
3 tbsp balsamic vinegar 45 mL
2 tbsp limejuice 30 mL
1 tbsp Dijon mustard 15 mL
1 tbsp ground cumin 15 mL
2 tsp hot pepper sauce 10 mL
½ tsp salt 2 mL
¼ tsp pepper 1 mL
1 lb boneless turkey breast,
cut into 4 pieces 500 g
1 19-oz can black beans,
drained and rinsed 540 mL
1½ cups frozen corn kernels, thawed 275 mL
½ sweet red pepper ½
3 green onions, chopped 3
¼ cup cilantro, chopped 50 mL


Directions
In a small bowl, whisk together olive oil, vinegar, limejuice, Dijon mustard, cumin, hot pepper sauce, salt and pepper. Place turkey in a non-metal bowl or pan. Pour ½ of the olive oil mixture over the turkey; mix to coat turkey. Cover and refrigerate 1 hour to overnight. Reserve remaining olive oil mixture until ready to use.

Preheat grill to medium-high. Grill marinated turkey pieces 4-5 minutes per side or until cooked through. Slice turkey into thin strips. In a large bowl, mix together black beans, corn, red pepper, green onions and turkey strips. Pour reserved olive oil mixture over top; mix to combine. Stir in cilantro. Serve immediately or refrigerate until ready to serve.
