Moroccan Pulse Salad

A vegetarian heart-healthy salad

Moroccan Pulse Salad

 

Salad Ingredients

1 can (19 oz/540 mL) lentils, drained and rinsed                          

1 can (19 oz/540 mL) chick peas, drained and rinsed                 

3 green onions, chopped                                                                      

1 red pepper, seeded and diced                                                        

1 green pepper, seeded and diced                                                   

1 jalapeno pepper, seeded and diced                                             

2 tsp orange zest                                                                                             

1 orange, peeled and cut into segments                                        

¼ cup slivered almonds, toasted                                                                 

½ cup dried cranberries                                                                                  

¼ cup slivered dried apricots                                                                        

 
Directions:

Combine all salad ingredients in large salad bowl. Add dressing and mix to combine.

 

Dressing Ingredients

1/4 cup canola oil

2 tbsp lemon juice

½ tsp cumin

½ tsp ground coriander

1/8 tsp cayenne pepper

1/8 tsp black pepper

 
Directions

Combine all ingredients and mix well.  Set aside.
